How was your Saturday? I know it is really challenging to stay on track throughout the weekend because everyone else is doing their weekend thing, eating their weekend treats, and drinking their weekend beer. But just keep in mind that although this is a lifestyle, right now we are kind of working clean eating overtime to up our game. We won’t always be doing a challenge but right now, we are! So let’s make sure that if we do cheat this weekend, we get right back on track after our meal. That being said, a cheat (or treat) meal is totally fine! Enjoy! I am forgoing the cheat meal this week in trade for my two days off of working out. Still nice! I have taken both yesterday morning and this morning to enjoy quiet time, read my Bible, and catch up on some things that I have been needing to do. If you have little ones, you know how valuable this quiet morning time is.
Speaking of not doing what everyone else is, just know that you ladies are doing exactly that. We are very few. But this is how you are supposed to eat, this is how you are supposed to live. Before there was junk, this was all there was. What we “clean eaters” are eating was it! It was the norm. Now it is considered the norm to eat processed food full of preservatives, get sick, be on medication for most of your life, and age terribly. Well, even though it’s the norm it doesn’t have to be that way nor should it.
So let me just thank each of you for being a wonderful example. The more of us there are, the closer we get to a new normal!

Here’s my vegan-ish food! I traded my cheat meal for two rest days.

So the fajita bowl is onion, bell peppers and chicken breast chunks. Then I make a sauce with butter, salt, pepper, cumin, paprika, onion powder and garlic powder and I drizzle it over everything and bake it at 400 for 40 minutes. I stir about half way through. I topped mine with salsa and cilantro, my husband melts cheese on corn tortillas and eats wraps with salsa. It’s good no matter how you eat it!
I decided today would be my cheat.
B- chicken sausage and a cashew milk latte
L- gluten free chicken nuggets and a big spinach salad with cucumber, red onion and Italian dressing.
S- one GF Oreo
D- homemade General Tso chicken over broccoli and rice
S- homemade almond flour chocolate chip cookies
No exercise because my left hip is killing me today. Super tight. Like screw stretching, I need rest.
So I’m super stuffed right now and I can’t wait to be back on track tomorrow!!
When my hips are tight I find rolling them out works great!
And you are right, I think I’ll just tell her😉

I never would have thought to bake it either. Do you mix the chicken raw with the veg?
Yup. Slices of onion and peppers, top it with the raw chicken chunks, pour the yummy on and bake. So good! And easy.

I woke up today like a new woman! Too many curtesy lunges after too long doing nothing, lol! Just super sore/tight.
And I’m staring at the cookies. I’m gonna hide them in my son’s snack cabinet. Lol!
